Testaccio fed Rome: its slaughterhouse stood across the road. The men who worked there were part paid in offal, and Checchino is where that offal became a cuisine.

What Checchino dal 1887 is known for
The fifth quarter
Tripe, sweetbreads, tail, cheek and the rest: what was left when the four quarters of the animal had been sold. The house claims coda alla vaccinara, oxtail stewed with celery, as its own invention.
The cellar in the hill
The restaurant is dug into Monte Testaccio, a hill made entirely of broken Roman oil jars. The wine is kept in a cave in the potsherds.

The old slaughterhouse opposite is now a centre for contemporary art. The covered market and the Protestant Cemetery, with the graves of Keats and Shelley, are a short walk away.

Five generations of one family
The Mariani family began in 1887 by selling wine from the cave in the hill. When the slaughterhouse opened across the road a few years later, they started to cook for the men who worked in it. The family is still here.
