Gratinée à l'oignon, under a crust of melted cheese: the dish of the market at four in the morning, and still the thing to order.
The trotter
Pig's trotter, stuffed or breaded and grilled, made to a recipe the house says has not changed since the 1940s. It serves oysters and shellfish as well.

What is left of the belly of Paris
Les Halles was the central food market of Paris for eight centuries, the place Zola called the belly of the city. Clément Blanc, who sold meat there, bought a bistro that had stood empty since the war and opened it in 1947 for the men of the market.
By the 1950s all Paris was coming after the theatre. The market moved out to the suburbs in 1969 and its iron halls were pulled down. The brasserie stayed, and is the best reminder of what the quarter used to be.
