Piperno is hard to find and worth finding: a square with no traffic behind the Ghetto, and a dining room where the artichokes arrive opened like flowers.

    1. Carciofi alla giudia

      Whole artichokes fried twice until the leaves are crisp enough to eat like crisps and the heart is soft. This is the house that made them famous.

      Monte de' Cenci is a small rise made by the ruins under it, with the palace of the Cenci family on one side. In summer the tables are outside.

    Pacifico Piperno opened his restaurant in 1860, when the Jews of Rome were still confined to the Ghetto. The Roman Jewish kitchen it serves grew up inside those walls, from what could be bought cheaply and fried well.
