Balthazar
Balthazar is a stage set that became the real thing. Red banquettes, foxed mirrors, a zinc bar, towers of shellfish on ice: it opened in 1997 in a building that had housed a tannery, and has been full ever since.

A brasserie for SoHo
The restaurateur Keith McNally, born in London, opened Balthazar on Spring Street when SoHo was turning from a district of artists' lofts into one of shops. It set the pattern for a generation of New York restaurants, several of them his own.
