St. JOHN

St. JOHN opened in 1994 in a building where bacon had been smoked, and set out to cook the parts of the animal that restaurants had stopped using. It changed what British food was thought to be.

What St. JOHN is known for

    1. Nose to tail

The kitchen is known for marrow bones roasted and served with parsley, for offal, for game and for old English puddings, on a menu that changes every day.

    2. The room

White walls, a concrete floor, coat pegs and paper tablecloths. Nothing hangs on the walls. The bar and bakery are in the old smokehouse, under a skylight.

    3. Smithfield

Meat has been sold in the market across the road since the Middle Ages. The Charterhouse and the church of St Bartholomew the Great are two minutes away.

    A smokehouse in Smithfield

The building in St John Street had been a ham and bacon smokehouse and was derelict when its founders found it. They kept its chimneys and its bareness.

The restaurant has been one of the most influential in the country for thirty years, and its bread and wine are now sold in shops of their own.
