George William Wilton started selling oysters, shrimps and cockles from a stall near the Haymarket in 1742. His family's business grew into a restaurant, moved several times within St James's, and has been in Jermyn Street since 1984.

    From stall to St James's

    The house supplied oysters to the court and was given a royal warrant by Queen Victoria. It went on moving from street to street in the same quarter.

    During the Blitz, the story goes, the owner declared she had had enough, and a banker eating at the bar asked for the restaurant to be added to his bill. His family has owned it since.
